BLW Fryup :: Microwave scrambled eggs

I admit it, I stole this image off another site.


Even though we are not allowed dairy here in Norway for our little ones, we *are* allowed eggs.

Microwave plus eggs, I know what you’re all thinking.

Turns out that if you do it right, it’s not that gross, and can even be pretty nice!  Bolle loves it.  And what an easy way to get some protein into breakfast!

Because I don’t think Norwegian baby tummies are much different than Swedish or UK ones, she is allowed cheese, too.  Mmm…

Microwave scrambled eggs

I invented this dish inspired by the people at the bagel shop at Paddington Station in London, where I once ordered an egg-bacon bagel to watch them microwave some sort of premade gloop into a rather gross little bagel shaped omelette.

Ingredients
1 egg
Freshly ground black pepper to taste
2 tsp baby’s usual milk, or water
Optional:  A tiny sprinkle of grated or chopped cheese and even ham.  Or spring onions.  Mmm…

Procedure
Whisk yolk and white together in a large mug or similar.  Add pepper, milk and cheese etc. if using.

Microwave on high for about 30s.  Take out, stir, and make sure you cut up the egg crust which has formed around the edge of the cooking vessel.

Microwave on high for another 20s, stir again.

Microwave on high for the last 10s, take out and cool before giving to baby.

Or you could be having it yourself.. Maybe without the breastmilk, which makes it a bit japanesey sweet omeletteish, not to my taste.
