BLW Recipe of the week :: Salmon burgers

OK, it’s a bit cheeky to call something «recipe of the week» when I pretty much never ever post a recipe these days, but this one is worth it!

We have salmon at least once per week, usually cooked in the microwave with some butter and a minimum of other efforts put in as this takes four minutes and is relatively healthy.   But let’s be honest, that does get old.

A simplified version of one I found in the «Under the walnut tree» cookbook by the Bergstrøm women, this recipe is simple, light, tasty, healthy and quick.  And very easy for small hands to hold and toothless gums can chew them.  A winner all round!

You need:
A four-pack of salmon portions
or about 560g salmon or other firm fish (i.e. not cod)
One large egg
1tbs nam pla fish sauce
2 tbs chopped fresh coriander, or 1tbs dried

1 small chopped onion
2 cloves of garlic, finely chopped
Juice of one lime (replace with lemon juice from a bottle in a pinch..)
Chopped fresh chilies and black pepper to taste
Sweet chili sauce, some nice bread and rocket lettuce to serve
Neutrally flavoured oil, or butter, for frying

You do:
Chop salmon very finely or process lightly with a blender or food processor -there should still be specks of fish visible in the finished result or it will go gloopy.  Stir in the other ingredients using a wooden spoon or spatula until well blended. Ideally it should be set aside for at least 20 minutes so the flavours can set.  

Heat oil in a medium to hot frying pan.  Use wet table spoons, drop into the hot frying pan and flatten the patties to form little burgers.  Fry until nicely browned on both sides.  Check one for doneness to make sure they are cooked throughout -they cook pretty quickly but it depends of course on your frying pan.

Serve with lettuce, sweet chili sauce and bread.  Would probably also work quite well with stir-fried vegetables and noodles.
